Ingredients
  • 1 Sweet Potatoe (Peeled)
  • 2 Eggs
  • 1 dash Cinnamon
  • 1 pinch Sea Salt
  • 1 cup Greek Yogurt
  • 1 cup Peanut Butter
  • 1 cup Maple Syrup
  • Berries (Blackberry, raspberry, blueberry) for the topping
  • 1 tbsp Butter or Oil
Instructions
  1. If you can, bake the sweet potato the night before to make it easier to peel in the morning.

     

    Peel the sweet potato put in the blender or mash it in a bowl with a fork.

     

    Preheat the stove to medium-high heat.

     

    Once the sweet potato is mashed or blended you can add the eggs and stir to make a smooth consistency.

     

    Add a pinch of cinnamon and sea salt for flavor.

     

    When the stove is ready to add some butter or oil, then scoop the sweet potato mix into the pan. Cook for 3-4 minutes on each side.

     

    Directions for topping:

    Put two scoops of Greek yogurt in a small bowl and pour in a tablespoon of maple syrup and some cinnamon.

     

    Once mixed together, the option to add peanut butter.

     

    When the pancakes are done, add the yogurt topping and berries on the pancakes.
