Preparation:
Combine the butter and honey in a large mixing bowl and stir until smooth. Gradually add oats and chia or flaxseed. Then add the cacao nibs and nuts to the mixture and gently combine.
Use your hands to roll the mixture into balls about the size of ping pong balls. If you want, roll the balls in the shredded coconut. You can either place the ball in mini muffin cups or place on wax paper on top of a cookie sheet.
Refrigerate for the night in an airtight container layering with wax paper if needed.
